Dugo is a pig’s blood used to make the traditional dish Dinuguan.
Dugo Pigs Blood
Dinuguan is a typical Filipino hearty stew that is traditionally made from pork offal (organs) stewed in a dark gravy of pig’s blood, garlic and chilies, vinegar. The name of this product in Filipino literally means blood. This dish is not really popular with many Europeans, one must be a real lover of it. In itself the dish is not really strange, and can actually be compared with the black pudding known to us or the Polish soup Czernina. Dinuguan is usually served with white rice or with the Filipino steamed cake Puto.
